Position Title: Food & Beverage Cost Controls Head
Department: Food & Beverage Cost Controls
Position Reports To: General Manager Operations and CFO
Positions Supervised: F & B Cost Controls Manager,F & B Controller
Responsible for maximizing profits and minimizing losses in liaison with the Purchase & Finance department by exercising controls on all the Food & Beverage items sold.
Duties and Responsibilities
1. To create Standard Operating Procedures & ensure that the SOPís are followed in Food & Beverage Controls department.
2. To monitor the Overall operation of the food and beverage stores, purchasing, and receiving departments, and submission of reports, as per SOPs.
3. To report all mistakes and/or failures to follow procedures immediately to the General Manager.
4. To calculate and submit adjusted monthly food and beverage costs for the Company.
5. To calculate and up-date food and beverage recipes, in co-operation with Chef and Purchasing department.
6. Ensure daily revenue audit activities are conducted.
7. Ensure store room purchasing & receiving procedures are adhered as per the SOPís.

Participates as an adjunct member of the Executive Team including assisting in scheduling meetings and attending all meetings
